I’ve known for years that Steel-Cut Oats are even healthier for you than “Old Fashioned” Oats, esp. because of their low glycemic idex (they help keep your blood sugar steady), but I hadn’t tried them until today.

They have a great texture. Some of the creaminess of “regular” oatmeal, but with a bit of chewy, almost crunchy added in. Fabulous flavor and extremely filling.
It’s a good thing we all liked them – we bought 25# from the food co-op!
Note for any adventurers – plan plenty of time for cooking. Takes about 25-30 minutes if you haven’t soaked them (which we hadn’t). Tonight we’re going to try putting them in the crockpot before bed so they’ll be ready in time for breakfast instead of brunch tomorrow.
